Nachos are one of my all time faves 🙌

I use a lentil "mince" that is pretty similar to my lentil bolognaise recipe, just add in some extra smoked paprika and a splash of Chipotle sauce.

Sometimes I make it with store bought grated vegan cheese sometimes I make my delicious nacho cheese.

If I have an oven then I grill them like traditional nachos, if not, I heat the corn chips in a fry pan and make more of a nacho salad.

Avocado is compulsory 🥑🥑🥑

I also love adding in sauteed sweet potato, fresh red capsicum and baby spinach to ensure this complete meal is packed with nutrients and soooooooo fresh and tasty 🤤
