Simple coconut seed and nut granola – Oven and stovetop friendly

This simple coconut seed and nut vegan granola is a beautiful way to start the day. It’s packed with oats, almonds, pepitas, sunflower seeds and coconut with a smooth blend of maple syrup, cinnamon and coconut flavours. It’s super simple to make and takes just 5 minutes to prepare and 15 minutes in the oven or on the stovetop in a frying pan/skillet.

So our porridge for breakfast days quickly diminished when we entered Queensland in the middle of summer. Instead, I have been making this yummy and simple vegan granola which does us for about 3 days of breakfast for 2 adults and a toddler. I usually serve it with overnight chia pudding, coconut yogurt and seasonal fruit and it’s divine.

How do I make simple vegan granola in the oven?

Coconut seed and nut granola or toasted muesli is super simple to make – combine the wet ingredients, then mix through the dry ingredients, spread the mixture out evenly on the large baking tray and bake for 15 minutes at 180 degrees C. Gently mix the granola about halfway through cooking. Let cool completely before storing.

How do I make simple vegan granola on the stovetop?

Follow the same steps to combine the wet ingredients, then mix through the dry ingredients. Heat a frying pan/ skillet to medium heat and pour in the mixture. Stir continuously as you cook for 10 – 15 minutes, until the granola is golden and toasty. Let cool completely before storing.

Ingredients
  

  • 1/4 C coconut oil - or other oil of choice
  • 1/4 C maple syrup
  • 1/4 C coconut cream
  • Pinch salt
  • 1/2 tsp cinnamon
  • 2 cups oats
  • 1/3 C pepitas
  • 1/3 C sunflower seeds
  • 1/3 C dried coconut - desiccated, shredded or flakes
  • 1/3 C roughly chopped/processed almonds - I give mine a quick blitz in my mini food processor

Instructions
 

  • If using the oven, preheat the oven to 180C (350F). In a large mixing bowl, combine the oil, maple syrup, coconut cream, salt and cinnamon.

  • Add in the oats, pepitas, sunflower seeds, desiccated coconut and almonds. Combine well.

  • To cook:
    Oven - Spread the mixture out on a large baking tray and bake for 15 minutes, stirring halfway.
    OR
    Stovetop - Heat a frying pan/ skillet to medium heat and pour in the mixture. Stir continuously as you cook for 10 - 15 minutes, until the granola is golden and toasty.

  • Remove from the oven/ heat and let cool completely before storing in an airtight container. Serve with yogurt and seasonal fruit.

Notes

Ensure you allow the freshly toasted granola to cool completely before storing, otherwise it will lose its crispness. 
Store in an airtight container for up to 1 week (or longer - ours never lasts that long).
